Bagara Rice is a beloved Telangana classic — basmati rice slow-cooked in a spiced base of Ankapur Bagara Masala, caramelized onions, and fresh herbs. A perfect companion to mutton, chicken, or vegetable curries.

🛒 Ingredients

  • 2 cups basmati rice, rinsed and soaked for 30 minutes
  • 4 tsp oil or ghee
  • 1 medium onion, thinly sliced
  • 3–4 green chilies, slit
  • 1 tsp ginger-garlic paste
  • Curry leaves & mint leaves, a handful each
  • 1 tsp Ankapur Bagara Masala powder
  • Salt to taste
  • 4 cups hot water (adjust slightly based on rice type)
  • Fresh coriander for garnish

How to Cook

  1. Soak the rice in water for 30 minutes. Drain and set aside.
  2. Heat oil or ghee in a heavy-bottomed pot over medium heat.
  3. Sauté onions until golden brown and well caramelized.
  4. Add green chilies, ginger-garlic paste, mint leaves, and curry leaves. Cook for 2–3 minutes until the raw smell disappears.
  5. Add 1 tsp Ankapur Bagara Masala. Stir and sauté for 30 seconds to release the aroma.
  6. Add the drained rice and gently mix. Sauté for 2 minutes to coat the rice with the spiced base.
  7. Pour in 4 cups of hot water and add salt. Stir gently without breaking the rice.
  8. Bring to a boil, then reduce heat to low. Cover and cook for 15–20 minutes until the rice is fully cooked and fluffy.
  9. Turn off the heat and let it rest, covered, for 5 minutes.
  10. Garnish with fresh coriander before serving.
